Ingredients

 Vegetable cooking spray
 Peanut oil1/2 Teaspoon
 Green onions1/4 Cup (16 tbs), sliced
 1/2 cup canned vegetable or chicken broth, undiluted
 Water1/4 Cup (16 tbs)
 Couscous1/2 Cup (16 tbs), uncooked
 2 teaspoons low-sodium soy sauce
 1/3 cup peeled, seeded, and chopped tomato
 Parsley1 Tablespoon, chopped
 Ground pepper1/2 Teaspoon
 Plum tomato1
 Whole peppercorns1/2 Teaspoon

Directions

Coat a medium saucepan with cooking spray; add oil.
Place over medium-high heat until hot.
Add green onions, and saute until tender.
Add vegetable broth and water; bring to a boil.
Remove from heat.
Add couscous and soy sauce; cover and let stand 5 minutes.
Stir in chopped tomato, parsley, and pepper.
If garnish is desired, cut top third from plum tomato; discard.
Use a paring knife to make decorative cuts around edge of tomato; place peppercorns in center.
