Seasoned Couscous Recipe
Ingredients
| Vegetable cooking spray | ||
| Peanut oil | 1/2 Teaspoon | |
| Green onions | 1/4 Cup (16 tbs), sliced | |
| 1/2 cup canned vegetable or chicken broth, undiluted | ||
| Water | 1/4 Cup (16 tbs) | |
| Couscous | 1/2 Cup (16 tbs), uncooked | |
| 2 teaspoons low-sodium soy sauce | ||
| 1/3 cup peeled, seeded, and chopped tomato | ||
| Parsley | 1 Tablespoon, chopped | |
| Ground pepper | 1/2 Teaspoon | |
| Plum tomato | 1 | |
| Whole peppercorns | 1/2 Teaspoon | |
Directions
Coat a medium saucepan with cooking spray; add oil.
Place over medium-high heat until hot.
Add green onions, and saute until tender.
Add vegetable broth and water; bring to a boil.
Remove from heat.
Add couscous and soy sauce; cover and let stand 5 minutes.
Stir in chopped tomato, parsley, and pepper.
If garnish is desired, cut top third from plum tomato; discard.
Use a paring knife to make decorative cuts around edge of tomato; place peppercorns in center.
