Ingredients
1 tbsp (15 ml) melted butter
5 stems fresh basil, leaves chopped
3 large tomatoes, peeled, seeded and chopped
1 garlic clove, smashed and chopped
1/4 cup (50 ml) heavy cream
2 cups (500 ml) cooked shucked mussels
1/2 cup (125 ml) grated mozzarella cheese
Few drops lemon juice
Few drops Tabasco sauce
Salt and pepper
Directions
Heat butter in sauce pan.
Add basil and cover; cook 3 to 4 minutes over medium-low heat.
Stir twice during cooking.
Add tomatoes and garlic; season well and cook 5 to 6 minutes over high heat, uncovered.
Mix in cream and cook 2 minutes over high heat.
Add mussels, lemon juice and Tabasco; mix well.
Spoon into scallop shells, top with cheese and broil several minutes in oven.
Add basil and cover; cook 3 to 4 minutes over medium-low heat.
