1 to 1 ½ pounds large scallops
 
1 scallion
 
3 garlic cloves
 
8-10 shitake mushrooms
 
4 pieces thick cut bacon
 
¼ stick of butter
 
Old bay seasoning
 
1 lemon

Directions

Add butter to skillet over high heat. Add finely diced scallions and garlic. While they are cooking, chop up the bacon and mushrooms. Add them to the skillet. Coat the scallops with Old Bay seasoning. Once the bacon is halfway cooked, move it off to the side of the skillet, making room for the scallops. Cook the scallops on each side for 2 ½ to 3 minutes, depending on the size of the scallops. Be sure to create a nice seared crust on either side. Squeeze a little lemon juice on top. Serve the scallops hot, covered with the other ingredients. This dish will nicely complement a side of pasta with alfredo sauce
