Seared Fillets of Pork with Chili Spices and Maple Whipped Sweet Potatoes Recipe
Ingredients
| Center-cut pork loin fillets- 8 (3-ounce), completely trimmed of any fat | ||
| Chili powder | 2 Tablespoon | |
| Cumin | 2 Teaspoon | |
| Kosher salt | 1 Teaspoon | |
| Ground black pepper | 1 Teaspoon | |
| Sweet potatoes | 4 | |
| Low-fat sour cream- 1 tablespoon, at room temperature | ||
| Pure maple syrup- 2 tablespoons | ||
| Extra-virgin olive oil- 1 teaspoon | ||
| Onion | 1 | |
| Red bell pepper- 1, halved, seeded, and cut into strips | ||
| Poblano pepper- 1, halved, seeded, and cut into strips | ||
| Homemade chicken broth or low-sodium canned broth- 1 cup | ||
| Unsalted butter | 1 Tablespoon | |
Directions
GETTING READY
1. Start by preheating the oven to 375° F
2. Take a mallet and pound the pork fillets until they are about 1/2 inch thick
MAKING
2. In a bowl, combine the chilli powder, sumin, salt and pepper, also season the pork on both sides with half the seasoning mixture
3.Take a plastic wrap and use it to cover the bowl containing the mixture, chill it in the refrigerator, and remove it when needed
4. In an oven, place the sweet potatoes and bake them for 40 to 45 minutes, once baked completely remove from the oven and set aside to cool
5. In a bowl, cut each potato in half and scoop the flesh in it, also add sour cream and maple syrup
6. In a potato masher, place the potatoes and mash it, and then season with salt and pepper
7. Spoon the potato mixture into a covered casserole dish and keep it warm
8. In a large nonstick skillet, heat the olive oil
9. In a skillet, place the pork and sear it over high heat for 1 to 2 minutes on both the sides, then transfer the pork to a platter and set aside to keep warm
10. In a pan, put the onion and peppers along with the remaining half of the seasoning mixture, and
stir in and saute for 2 or 3 minutes more
11. In a pan, add the chicken broth and cook over high heat for 5 to 6 minutes, cook until t 1/3 cup of sauce is remaining in the pan, once the chicken is cooked properly then remove from the heat and stir in the butter
12. Place the whipped sweet potatoes in the center of each of 4 heated plates, also place 2 pieces of pork on each plate and spoon the sauce over it
SERVING
13. Serve immediately with cooked vegetables, salads, rice
