Seafood Quiche Recipe

Ingredients
Pastry for one 9" shell
4 eggs
2 c. light cream 500 mL
3/4 tsp. salt 3 mL
Dash nutmeg
Dash cayenne
1/8 tsp. ground white pepper 1 mL
1/4 lb. sliced scallops 125 g
1/4 lb. cooked baby shrimp 125 g
2 green onions, chopped 2
4 oz. Swiss cheese, grated 125 g
Directions
Preheat the oven to 425°F (215°C).
Roll out the pastry and line a 9" (23 cm) pie plate.
Refrigerate 1/2 hr.
Combine the next 6 ingredients and mix well.
Set aside.
Spread the scallops, shrimp, onions and cheese on the bottom of the pie shell.
Pour the egg mixture over.
Bake for 15-20 minutes.
Reduce the heat to 325°F (160°C) and bake 40 mins. longer or until a knife inserted in the centre comes out clean.
Let stand 5 minutes before cutting into wedges.
