Seafood Mold Recipe

Ingredients
| Unflavored gelatin | 1 | |
| Milk | 1 Cup (16 tbs) | |
| Egg yolks | 2 | |
| Salt | 1/2 Teaspoon | |
| Prepared mustard | 1 Teaspoon | |
| Tabasco | 1/2 Teaspoon | |
| Lemon juice | 2 Tablespoon | |
| 2 cups cooked, flaked fish | ||
Directions
Soften gelatin in cold milk in top of double boiler.
Put over boiling water and stir until gelatin is dissolved.
Combine egg yolks, salt, mustard and Tabasco and beat slightly.
Add small amount of the milk to the egg yolk mixture and return to the double boiler.
Cook over hot, not boiling water, stirring con- stantly until mixture thickens.
Remove from heat and cool.
Stir in lemon juice and fish.
Turn into large mold and chill until firm.
Unmold and garnish with water cress and sliced stuffed green olives.
