Ingredients

 Butter2 Tablespoon
 Bacon1/2 Cup (16 tbs), diced
 Green onion1/2 Cup (16 tbs), chopped
 Parsley1 Tablespoon, chopped
 Garlic1 Clove (5gm), mashed
 Flour2 Tablespoon
 Okra1 Can (10oz)
 Tomatoes1 Can (10oz)
 Ham3/4 Cup (16 tbs), diced
 Thyme1/2 Tablespoon
 Bay leaves2
 Boiling water7 Cup (16 tbs)
 1 lb. shucked, small raw shrimp
 Crab meat3/4 Pound, flaked
 Rice1/2 Cup (16 tbs), uncooked

Directions

Melt butter in large, heavy kettle.
Add bacon, green onion, and garlic.
Saute until onion is limp and clear.
Sprinkle in flour and stir until blended.
Add okra, tomatoes, ham, thyme, bay leaves, and parsley; pour in boiling water.
Stirring often, simmer for 45 minutes.
Cook rice separately.
To serve: spoon 3 T. rice into heated bowls, then ladle over piping hot gumbo mixture.
