Seafood Gumbo Recipe
Ingredients
| Salt pork | 1 6 inch | |
| Okra package | 1/2 , sliced | |
| Onion | 1 , chopped | |
| Flour | 2 Tablespoon | |
| 1 doz. oysters and liquor | ||
| Canned tomatoes | 2 Cup (16 tbs) | |
| Parsley sprigs | 2 | |
| Salt | 1 Teaspoon | |
| Bay Leaf | 1 | |
| Garlic salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
| Cayenne pepper | 1 Dash | |
| Crab meat | 1 Can (10oz) | |
| Shrimp | 1 Pound, deveined | |

Directions
Fry salt pork in skillet until crisp.
Remove from skil- let; chop and set aside.
Saute okra in pan drippings.
Add onion; saute until tender, stirring constantly.
Push vegetables to side of skillet; add flour, cooking until browned.
Drain oysters, reserving liquor.
Mix onion and okra intoflour;addtomatoes,oysterliquor and 1 1/2 quarts boiling water gradually, stirring constantly until smooth.
Add seasonings; stir well.
Simmer for 1 hour.
Add salt pork, crab meat and shrimp; simmer for several minutes longer.
Add oys- ters; simmer for 13 minutes.
Add file; cook for 2 minutes longer.
