Seafood Crepes Recipe
Seafood crepes are filled and stuffed crepes that can be prepared in the microwave for a light and simple lunch or supper. The crepes are prepared with butter, flour, chicken broth and flaored with lemon juice and salt. Filled with a mixture of tuna shrimp and cheese along with spinach, the crepes can be served as such or with hollandaise sauce and a salad.
Ingredients
1 package (10 ounces) frozen chopped spinach
1/3 cup margarine or butter
1/4 cup all-purpose flour
1 can (133/4 ounces) chicken broth (1 3/4 cups)
1/2 teaspoon salt
Dash of pepper
1 tablespoon lemon juice
1 can (61/2 ounces) tuna, drained
1 can (4 1/2 ounces) medium shrimp, drained
1 cup shredded Swiss cheese (about 4 ounces)
12 crepes (8 to 10 inches in diameter)
Dried parsley flakes
Directions
Microwave frozen spinach in package on paper towel until thawed, 4 to 5 minutes; drain.
Microwave margarine in 4 cup glass measure until melted, 30 seconds to 1 minute.
Stir in flour, broth, salt and pepper.
Microwave 2 minutes; stir.
Microwave until mixture boils and thickens, 1 1/2 to 2 minutes, stirring every minute.
Stir in lemon juice.
Mix spinach, tuna, shrimp, cheese and 3/4 cup of the sauce.
Place slightly rounded 1/4 cupseafood mixture in center of each crepe.
Roll up crepes; place seam side down in row in oblong baking dish, 12 x 7 1/2 x 2 inches.
Pour remaining sauce over rolls; sprinkle with parsley.
Cover loosely and microwave until hot, 6 to 7 minutes.
