Seafood Salad Primavera Recipe

Ingredients
12 ounces pasta twists, penne, or medium-size pasta shells
4 ounces green beans, trimmed and cut into 1 1/2 inch lengths
1 1/2 cups broccoli florets
1 small yellow summer squash, sliced 1/4 inch thick
1 pound sea scallops or shelled and deveined shrimp or a combination
1 cup Sweet Red Pepper
Sauce Grated Parmesan cheese (optional)
Directions
1 In a large saucepan of boiling unsalted water, cook the pasta over moderately high heat for 5 minutes.
Add the green beans and broccoli and cookanother 2 minutes.
Add the squash and seafood and cook 2 to 3 minutes more or until the seafood is opaque and the vegetables are crisp-tender.
Drain, rinse with cold waterto stop the cooking, and drain again.
Transfer to a large bowl.
Pour the sauce overthe salad and toss well.
If desired, sprinkle the cheese on each serving.
