Seafood Salad Recipe
Ingredients
| 2 dozen mussels or clams | ||
| Olive oil | 6 Tablespoon | |
| 1 cleaned squid, cut into rings or strips | ||
| 1 fillet of cod or other white fish, cooked and cut into pieces | ||
| 3 dozen prawns, cooked and shelled | ||
| Cockles, scallops, winkles, or any other shellfish | ||
| Lemon juice | 2 Tablespoon | |
| Salt | To Taste | |
| black pepper | 1 | |
| Freshly chopped parsley | ||
| Lemon wedges to garnish | ||
Directions
Heat one-third of olive oil in a large frying pan, and add scrubbed and dried mussels or clams or other shellfish.
Cover and cook until shells open.
Discard any that do not.
Transfer to a bowl, and allow to cool.
In same pan, cook the squid for 20 min., or until tender.
Remove, and allow to cool.
Combine mussels, squid, fish, prawns, and other shellfish on a large serving platter.
Mix olive oil with lemon juice; season, and dress seafood.
Garnish with chopped parsley and lemon wedges, and chill before serving.
