Seafood Pesto Salad Recipe
Ingredients
| 2 cups uncooked medium shell macaroni | ||
| Pesto | 2/3 Cup (16 tbs) | |
| 3 Italian pear-shaped tomatoes, cut into eighths | ||
| 1/3 cup small pitted ripe olives | ||
| White wine vinegar | 2 Tablespoon | |
| 4 ounces spinach, coarsely chopped | ||
| Scallops | 1 1/2 Cup (16 tbs) | |
Directions
Cook macaroni as directed on package; drain.
Rinse in cold water; drain.
Mix macaroni, pesto, tomatoes, olives and vinegar in large bowl.
Add spinach and seafood.
Toss.
