Ingredients

 
7 tablespoons butter
 
1/2 cup raw shrimp, cut into bite-sized pieces
 
1/2 cup canned or fresh crabmeat, picked over well and flaked
 
1/2 cup bay or sea scallops, cut into bite sized pieces
 
1 tablespoon finely chopped onion
 
2 tablespoons sherry
 
1/2 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
3 tablespoons flour
 
1 1/2 cups milk
 
1/2 cup bread crumbs
 
1/4 cup grated Parmesan cheese

Directions

1. Preheat oven to hot (400° F.).
2. In a large skillet heat four tablespoons of the butter, add the seafood and onion and cook four minutes, stirring occasionally. Sprinkle with the sherry, salt and pepper.
3. In a saucepan melt the remaining butter, add the flour and stir with a wire whisk until blended. Meanwhile, bring the milk to a boil and add all at once to the butter-flour mixture, stirring vigorously with the whisk until the sauce is thickened and smooth. Combine the sauce with the seafood mixture.
4. Spoon the mixture into individual buttered ramekins or shells and sprinkle with the bread crumbs mixed with the cheese.
5. Bake twelve to fifteen minutes, or brown under a broiler. Garnish with lemon wedges.
