2 tablespoons butter
 
1/2 cup diced bacon (approximately 6 slices)
 
1/2 cup chopped green onion
 
1 clove garlic, mashed or minced
 
2 tablespoons flour
 
1 can (1 lb.) okra
 
1 can (1 lb.) solid pack tomatoes
 
1 cup diced ham, cut in 1/4 -inch cubes
 
2 teaspoons finely chopped fresh thyme or 1/2 teaspoon powdered thyme
 
2 bay leaves
 
7 cups boiling water
 
1 pound shucked small, raw shrimp
 
3/4 pound flaked crab meat
 
1/2 cup uncooked rice

Directions

Melt butter in a large, heavy kettle.
Add bacon, green onion, and garlic, and saute until onion is limp and clear.
Sprinkle in flour and stir until blended.
Add okra, tomatoes, ham, thyme, and bay leaves; pour in boiling water.
Stirring often, simmer for 45 minutes.
Add shrimp and crab to broth and continue cooking 15 minutes.
Cook rice by your preferred method.
