6 cups (1.4 1) shredded lettuce
1/2 lb (230 g) cooked bay shrimp, canned, frozen or fresh
1/2 lb (230 g) flaked cooked crab-meat, canned, frozen or fresh
1 small avocado, peeled, pitted and thinly sliced
1 cup (240 ml) julienne sticks of FRIEDA'S Jacamar, peeled
1 red or yellow bell pepper, slivered
1/2 cup (120 ml) thinly sliced red onion
1/2 cup (120 ml) shredded cheddar or Monterey Jack cheese
SALSA DRESSING:
1/2 cup (120 ml) bottled or homemade salsa
1/4 cup (60 ml) white wine vinegar
2 tbs (30 ml) FRIEDA'S Fresh Cilantro, chopped and additional sprigs, for garnish warmed buttered tortillas, optional
Directions
Line 4 salad plates with shredded lettuce.
Arrange shrimp, crab, avocado, jacamar, bell pepper and onion on each salad plate.
Sprinkle on cheese.
Dressing: Stir together salsa, vinegar and cilantro.
Spoon over salads.
Garnish salads with additional sprigs of cilantro.
