Seafood Enchiladas Recipe
Over the years I have mastered the art of making Seafood Enchiladas which I was taught by my family elders. Treat your near and dear ones with this amazing Seafood Enchiladas as a Main Dish . Ingredients
4 ounces frozen crab flavored fish pieces or crabmeat
2/3 cup skim milk
2 tablespoons all purpose flour
Dash salt
1/4 cup shredded cheddar cheese
1/2 of a 4 ounce can chopped green chili peppers
4 6 inch flour tortillas
2 tablespoons salsa
Directions
Thaw crab flavored fish pieces or crabmeat, if frozen.
Cut into bite size pieces; set aside.
In a 2 cup measure stir together skim milk, flour, and salt.
Cook, uncovered, on 100% power (high) for 1 1/2 to 2 1/2 minutes (2 1/2 to 3 1/2 minutes in a low wattage oven) or till thickened and bubbly, stirring every 30 seconds.
Stir in cheese till melted.
Stir in crab and green chili peppers.
Divide crab mixture among tortillas, spreading down the center.
Roll up tortillas.
Place filled tortillas, seam side down, in 2 individual au gratin dishes.
Cover with vented clear plastic wrap.
Cook on 70% power (medium high) for 3 to 4 minutes (2 to 3 minutes on high power in a low wattage oven) or till heated through.
Top tortillas with salsa.
