1 8-ounce package small shell macaroni
 
3 tablespoons cider vinegar
 
1 tablespoon minced parsley
 
1/2 teaspoon salt
 
1/2 teaspoon sugar
 
1/2 teaspoon prepared mustard
 
1/8 teaspoon pepper
 
Olive or salad oil
 
1 small head lettuce
 
1/2 pound feta cheese, cut into 1/2-inch cubes
 
1 7 1/2- to 7 3/4-ounce can salmon, drained and separated into bite-sized chunks
 
1 6-ounce can (drained weight) pitted large ripe olives, drained
 
1 3 3/4-ounce can sardines, packed in oil,drained
 
1 large tomato, cut into 1/2-inch pieces
 
1 medium-sized onion, thinly sliced

Directions

1. Prepare shell macaroni as label directs. Meanwhile, prepare dressing: In small bowl, with fork or wire whisk, mix vinegar, parsley, salt, sugar, mustard, pepper, and 1/2 cup olive oil. Pour into small cruet or pitcher.
2. Drain macaroni well. Gently toss macaroni with 1 tablespoon olive oil.
3. Line large platter with lettuce leaves. Arrange macaroni and remaining ingredients in separate piles on lettuce.
