Sea Food Souffle Recipe

Ingredients
Canned Crab Meat – 1 cup, chopped (shrimps, flaked fish or cooked crab)
Lemon Juice – 2 tablespoons
Cayenne – just a dash
Salt – ½ teaspoon
Butter – 4 tablespoons
Flour – 4 tablespoons
Milk – 1 cup
Eggs – 4, separated
Chives - 1 tablespoon, chopped
Directions
GETTING READY
1) Preheat the oven to 350F
MAKING
2) In a bowl, mix together the seafood meat of your choice with lemon juice, cayenne, salt and chives
3) In a saucepan, melt some butter and add the flour
4) Add in the milk and stir over a low heat till thickened
5) Add the mixed seafood
6) Using a fork, beat the egg yolks and add to the mixture
7) In another bowl, beat the egg whites till stiff
8) Fold in half the mixture and blend well
9) Then fold in the remaining mixture and spoon into a greased casserole
10) Place the dish in a pan of hot water and bake for an hour at 350F

11) Serve warm with Mushroom Cheese Sauce
