2 cans (4 ounce) sardines
1 container (8 ounce) cottage cheese
1/4 cup mayonnaise
2 tablespoons sour cream
2 tablespoons chili sauce
1/4 cup minced celery
2 hard-cooked eggs, chopped
Grated rind of 1/2 lemon
Salt and pepper
4 frozen fillets of flounder, haddock or cod (about 1 lb.)
Crisp salad greens
2 hard-cooked eggs, sieved
Directions
Drain sardines.
Mash one can, reserving second can.
Combine mashed sardines with cottage cheese, mayonnaise, sour cream, chili sauce, celery, chopped eggs and lemon rind.
Season to taste with salt and pepper.
Cut fish fillets in halves.
Poach until tender.
Chill.
Place 4 fish fillets on bed of crisp greens; spoon prepared filling over fish; repeat layers.
Top with sardines and sieved eggs.
