Ingredients
| New potatoes - 1 lb [500 g] | ||
| Filleted cod - 1 lb [500 g] | ||
| Butter - 3 oz [75 g] | ||
| Onions | 2 | |
| Shrimps - 4 oz [100 g] | ||
| Mushrooms - 3 oz [75 g], sliced | ||
| Dry cider or white wine - 4 tablespoons [4 X 20 ml spoons] | ||
| Lemon twists - as required | ||
| Parsley - as required | ||
| Salt | 1 To taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1) Preheat oven to 350°F (180°C), Gas Mark 4.
2) Divide the fish fillets in 4 neat parts.
3) Wash and scrape the potatoes. Cut them into wafer thin slices and place aside.
MAKING
4) In a pan, add little butter to fry the fish until golden.
5) In the casserole, arrange a layer of potatoes using half part.
6) Sprinkle nutmeg on top.
7) In the pan, add onions to fry in 1 oz (25 g) of butter.
8) Add the fried onions into the casserole.
9) Arrange the fish over the onions, follow with shrimps, mushrooms and liquid.
10) Add a final layer of potatoes using the reserved part.
11) Use the remaining butter to brush.
12) Place inside the oven to cook for 1 hour.
SERVING
13) Garnish the dish with lemon twists and parsley, before serving.
