Ingredients

| 1/2 teaspoon rice wine or dry sherry | ||
| Salt | 1/4 Teaspoon (Marinade:) | |
| 1/2 teaspoon minced fresh ginger root | ||
| Cornstarch | 1 Teaspoon (Marinade:) | |
| Sesame oil | 1 Teaspoon (Marinade:) | |
| Eggs | 5 (Marinade:) | |
| Salt | 1/2 Teaspoon (Marinade:) | |
| Vegetable oil | 1 Cup (16 tbs) (Marinade:) | |
Directions
Shell and devein shrimp.
Rinse and pat dry with a paper towel.
Combine marinade ingredients in a small bowl.
Add shrimp; mix well.
Let stand 10 minutes.
Beat eggs slightly in a medium bowl.
Beat in salt.
Heat oil in a wok over high heat 1 minute.
Stir-fry shrimp 30 seconds.
Remove shrimp from oil with a slotted spoon, draining well over wok.
Set shrimp aside.
Remove oil from wok except 5 tablespoons.
Reduce heat to medium.
Pour egg mixture into wok.
Add cooked shrimp.
Stir-fry 1 to 2 minutes until eggs are set.
Remove from wok and place on a small platter.
