Scrambled Eggs with Mustard Recipe
Ingredients
| Eggs | 8 Small, beaten | |
| Dijon Mustard | 2 Teaspoon | |
| Butter | 4 Tablespoon | |
| Onion | 1 | |
| Degreased meat roasting juices 1/4 cup , OR 1/2 Meat stock - cup [125 ml.] boiled until it is reduced by half, and cooled | ||
| Salt | 1 To taste | |
| Pepper | To Taste | |
Directions
MAKING
1.Heat two tablespoons of butter and fry the onion in it until tender.
2.Cut the remaining butter to pieces and add it along with meat juice, salt, pepper and onion to the eggs.
3.Take a heavy saucepan, transfer the egg mixture to it and cook on low flame by continuously stirring with wooden spoon.
4.Once the eggs have scrambled and are creamy, put the mustard as per taste.
SERVING
5.Serve warm.
