Scrambled Eggs Diablo Recipe

8 eggs
 
2 canned green chili peppers
 
1 teaspoon salt
 
1/4 teaspoon freshly ground pepper
 
1/2 pound (8 oz.) processed sharp Cheddar cheese
 
2 tablespoons butter
 
Additional minced green chili peppers

Directions

Beat the eggs just until the yolks and whites are blended.
Wash chili peppers, remove seeds, drain, and then chop finely; stir into beaten eggs, and add salt and pepper.
Shred the cheese.
Melt butter in a large frying pan and pour in the egg mixture.
Cook slowly, lifting the eggs from the bottom by slipping a spatula underneath.
When the eggs are barely set, sprinkle with the cheese, cover, and turn heat as low as possible.
Let cook just until cheese is melted and eggs are set, about 3 minutes.
