Scrambled Eggs And Smoked Salmon Recipe
Ingredients
| Potatoes | 4 Large | |
| Eggs | 4 standard | |
| 60 ml / 4 tbsp milk | ||
| Pinch of grated nutmeg | ||
| Cayenne pepper | 1 Pinch | |
| 175 g / 6 oz butter | ||
| 225 g / 8 oz smoked salmon, cut into strips | ||
| Chives | 1 Bunch (100gm), snipped | |
| Grilled tomatoes and fresh chives to serve | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1)Bake potatoes in hot oven.
2)In a small bowl, put milk, nutmeg, seasoning, cayenne and eggs. Beat well until froth if formed.
3)Once baked, cut potatoes in half and smear with butter.
4)Fluff the flesh keep warm in oven.
5)In a small saucepan, add egg mixture and butter.
6)Cook, stirring continuously over low heat and scramble egg.
7)Now stir in smoked salmon, chives and continue to cook for a few seconds more.
SERVING
8)Top potatoes with salmon mixture and grilled tomatoes. Garnish with chives and serve hot.
