 Yeast2 Teaspoon
 8 fl oz/250 ml milk, warmed
 2 1/2 oz/65 g flour
 Caster sugar1 Teaspoon
 Salt1 Pinch
 Butter1 Tablespoon, melted
 Egg1 , separated
 Oil1 Tablespoon
 1 oz/25 g butter
 Eggs4 , beaten
 Milk4 Tablespoon
 Ground black pepper1 To taste
 Chives1 Tablespoon, chopped
 Chives to garnish
 Salt To Taste

Directions

Make the blinis as for the previous recipe.
Use a small petal-shaped cutter to cut out 24 shapes.
Melt the butter in a saucepan and add the beaten eggs, milk, seasoning and chopped chives.
Cook the egg mixture gently until lightly scrambled, stirring frequently.
Transfer to the blini shapes, garnish and serve.
