11/8 Cup Buttermilk
1 Egg
1/2 Cup Brown Sugar
1/4 Cup Melted Shortening, Cooled
1/2 Cup Unbleached Flour
1/2 Cup Whole Wheat
Pastry Flour
11/2 Tsp. Baking Powder
1/2 Tsp. Soda
1/2 Tsp. Salt
Directions
Soak oatmeal in buttermilk for one hour.
Add egg and beat well.
Add sugar and mix.
Add cooled shortening.
Add white and wheat flour sifted with baking powder, soda and salt.
Spoon into greased muffin cups and bake until brown.
Bake at 400 degrees 15 to 20 minutes
