Scottish Lamb Casserole Recipe
Why visit a restaurant for Scottish Lamb Casserole when you can make it at home. This is the most comforting Side Dish recipe I have come across. Is there a higher crime than reading about this Scottish Lamb Casserole and not trying it out?
Ingredients
2 tbsp (30 mL) butter or bacon fat
2 onions, peeled and thinly sliced
2 lb (1 kg) lamb of your choice, cubed
1 tsp (5 mL) salt
1/4 tsp (1 mL) pepper
1/4 tsp (1 mL) allspice
1 19-oz (540 mL) can tomatoes
2 tsp (10 mL) sugar
2 cups (500 mL) bread cubes
1/4 tsp (1 mL) aniseed
1/2 tsp (2 mL) salt
1 tbsp (15 mL) butter
Directions
Heat the butter or the bacon rat 4 minutes at HIGH.
Add the onions, stir well and microwave 3 minutes at HIGH.
Stir and add the cubed lamb.
Stir together.
Micro-wave 3 minutes at HIGH.
Mix together the salt, pepper and allspice.
Sprin-kle over meat.
Stir.
Mix together the sugar and tomatoes.
Pour over the meat.
Stir the bread cubes with the 1/2 tsp (2 mL) salt and the aniseed.
Sprinkle over the whole.
Dot with butter.
Cover with lid or plastic wrap.
Microwave 10 minutes at HIGH.
Uncover and microwave at MEDIUM 20 to 25 minutes or until the meat is tender.
Check doneness with the point of a knife.
Let stand 10 minutes in a warm place before serving.
