Scots Omelette Recipe
Ingredients
| Eggs | 6 Small, beaten | |
| Herring milts (soft roe) - 4, fresh | ||
| Salt | 1 To taste | |
| Cayenne pepper | 1 To taste | |
| Chives - 1 tbsp, finely cut, fresh | ||
| Parsley | 1 Tablespoon, finely chopped | |
| Chervil | 1 Tablespoon, finely chopped | |
| Smoked salmon | 4 | |
| Butter | 4 Tablespoon | |
| Fines herbes - 2 tbsp | ||
Directions
MAKING
1) Sprinkle the herring milt with the salt, cayenne, chives, parsley and chervil.
2) Then wrap each herring milt in a smoked salmon slice.
3) In a skillet, saute over a gentle heat in 2 tablespoons butter for 5 minutes.
4) In a bowl, season the eggs with the salt to taste and beat into the fines herbes.
5) In a medium-sized omelet pan, heat 2 tablespoons butter, eggs and cook for about 2 minutes, or until the omelet is just set.
6) Place the wrapped herring milt aslant in the center of the omelet, roll up.
SERVING
7) Serve the Scots Omelett, immediately on a serving plate.
