Scotch Eggs Recipe
Ingredients
| Oil for deep frying | ||
| 1 lb. bulk sausage meat | ||
| Anchovies | 6 , finely chopped | |
| Pepper | 1 Dash | |
| Egg | 1 | |
| Dry bread crumbs | 3/4 Cup (16 tbs) | |
| 6 hard-cooked eggs | ||
Directions
Heat oil to 375 degrees.
Combine sausage meat, anchovies and pepper, blending well with a fork.
Beat egg with a fork in a flat dish.
Put bread crumbs in another flat dish.
Divide sausage meat into 6 equal parts (about 1/3 cup each) and wrap each part around one of the hard-cooked eggs, covering it as evenly as possible.
Roll each meat-wrapped egg in beaten egg then in crumbs to coat all over.
Fry, 2 at a time, in hot fat for 12 to 15 minutes or until sausage meat is cooked through and outside is very dark brown.
Serve cold, cut in quarters, as a snack with drinks.
Note: To serve hot as an appetizer, cut in half and top with hot, canned tomato sauce.
