Stir in dry ingredients, which have been sifted together.
Chill until easy to handle, then roll or pat dough on a floured board to 1/4" thickness.
Cut in desired shapes, and arrange on ungreased cookie sheets.
Bake in a moderate oven of 350ºF for 20-25 min, or until delicately browned.
A mixture of cinnamon and sugar may be sprinkled on top of cookies before baking.
