Scandinavian Strawberry Muffins Recipe

Everyone who have had these yummy Scandinavian Strawberry Muffins have fallen in love with it! Who wouldn’t? It is just too tasty to resist! I love munching into these Scandinavian Strawberry Muffins that I make it a point to bake for all holidays!

Ingredients

 
11/4 Cups Unbleached Flour
 
2/3 Cup Oat Bran
 
11/2 Tsp. Baking Powder
 
1/2 Tsp. Soda
 
1/2 Cup Sugar
 
2 Eggs
 
4 Tbsp. Butter, Melted
 
1 Cup Buttermilk
 
1/2 Cup Scandinavian
 
Strawberry Preserves
 
1/4 Cup Sliced Almonds

Directions

Mix together flour, oat bran, baking powder, soda and sugar in a large bowl.
In another bowl, whisk eggs with melted butter and buttermilk.
Make a well in the dry ingredients and quickly add egg mixture.
Fill greased muffin tins one-half full.
Add a heaping tablespoon of strawberry preserves, then cover with batter.
Top with sliced almonds.
Bake until golden brown and tester comes out clean.
Bake at 400 degrees 15-20 minutes
