Scandinavian Omelette Recipe

Ingredients
3 eggs, separated
2 tbsp (30 mL) milk or water
1 tbsp (15 mL) butter
1/2 cup (125 mL) cooked salmon
4 green onions, chopped fine
1 tsp (5 mL) dill, chopped fine
Directions
Beat the egg whites until they form soft peaks.
Beat the egg yolks with the milk or water.
Gently fold the whites into the yolks.
Place the butter in a 9-inch (23 cm) Pyrex or Corning pie plate and melt 1 minute at HIGH.
Pour the egg mixture into the hot butter.
Microwave at MEDIUM 3 to 4 minutes, or until eggs are set.
While the eggs are cooking, mix together the cooked salmon, green onions and dill.
Pour over the cooked omelette.
Fold in half and serve.
