Scandinavian Dill Patata Muffins Recipe

Ingredients
| All purpose flour | 2 Cup (16 tbs) | |
| Baking powder | 1 1/2 Teaspoon | |
| Soda | 1/4 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 3 Tbsp. Fresh Dill or 1 Tsp. Dried Dill | ||
| Eggs | 2 , beaten | |
| Sour cream | 1/2 Cup (16 tbs) | |
| Potatoes | 2/3 Cup (16 tbs), mashed | |
| Milk | 3/4 Cup (16 tbs) | |
| 1/2 Tsp. Butter Flavoring | ||
| Butter/Margarine | 1/4 Cup (16 tbs), melted | |
Directions
Stir together flour, baking powder, soda, salt and dill.
In another bowl, whisk eggs and stir in sour cream, mashed potatoes, milk, butter flavoring and melted shortening.
Make a well in the dry ingredients and quickly add the egg-milk mixture.
Batter will be sticky.
Spoon into greased muffin cups and sprinkle extra dill on top of each muffin.
Bake until tops begin to turn golden and tester comes out clean.
Bake at 400 degrees 20 minutes
