Scandinavian Beans Recipe
Ingredients
2 Lbs. Pinto Beans
12 Cups Water
1/2 Tsp. Baking Soda
4 Tsp. Salt
4 Tbs. Cooking Oil
3 Slices Bacon, cut up
1/4 Cup Diced Onion
1 Medium Clove Garlic
1/4 Tsp. Black Pepper
1/4 Cup Light Molasses
1 Cup Catsup
Tabasco Sauce to taste
1 Tsp. Worcestershire Sauce
1 1/2 Cups Brown Sugar
1/2 Cup Cider Vinegar
1/4 Tsp. Dry Mustard
Directions
Place washed beans in large kettle, add water and bring to boiling.
Boil for 2 minutes only.
Remove from heat, add baking soda to cut down cooking time.
Cover.
Let stand 1 hour or soak beans with baking soda in measured amount of water overnight.
To cook, put kettle of beans with soaking water on high heat.
Add salt and oil to keep down the foam, when boiling, reduce heat to simmer.
Cover tightly and cook 2 hours or until tender.
Mix together all remaining ingredients.
Add to the cooked beans, stirring carefully with a wooden spoon to avoid breaking beans.
Cook slowly, covered, on surface unit for 30 minutes or so, or place in a 325 degree oven for 1 1/2 hours.
Taste really improves with standing and reheating.
