Scandinavian Style Liver Loaf Recipe
Ingredients
| Butter/Margarine | 2 Tablespoon | |
| All purpose flour | 2 Tablespoon | |
| 1 cup 10 percent cream | ||
| Salt | 1 Teaspoon | |
| 1 1/2 tsp Quatre-Epices or to taste | ||
| Beef liver | 1 Pound | |
| 1 onion, cut in pieces | ||
| 1 or 2 cloves garlic | ||
| Few sprigs parsley | ||
| Eggs | 2 | |
| Sausage meat | 1/2 Pound | |
| 1/2 lb sliced side bacon | ||
Directions
Melt margarine and stir in flour.
Add cream, salt, spices and cook until smoothly thickened.
Skin liver and remove membrane.
Whiz in a blender with onions, garlic, parsley and eggs using the sauce as a lubricant if necessary.
Beat in sausage meat.
Line a 6-cup loaf pan or mold with half slices bacon and scrape in the liver mixture.
Cover with any remaining bacon and bake in a deep pan of hot water at 350F for 1 1/2 hours.
Cool to room temperature then chill.
