Ingredients

 
1 medium (3-ounce) potato, peeled and cut in chunks
 
1/2 cup skim milk
 
Salt and pepper
 
1 teaspoon dehydrated onion flakes
 
8 ounces assorted fish fillets or sticks (whiting, cod, flounder, or less familiar kinds)
 
2 teaspoons salt
 
1/2 bay leaf
 
1 teaspoon margarine
 
1/2 teaspoon fresh chopped dill

Directions

Using very low heat, simmer potato in skim milk with salt, pepper and onion flakes.
In separate saucepan, immerse fish in 3 cups boiling water with salt and bay leaf.
Cook gently at low simmer for 5 minutes, and drain.
Combine fish and potato mixture in serving bowl.
Add margarine and dill.
