Ingredients
8 oz. streaky bacon, sliced
6 eggs
4 fl. oz. double cream
2 teaspoons flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped chives
Directions
Cut each slice of bacon in half, crosswise.
In a medium sized frying pan, fry the bacon over moderate heat for 4 to 6 minutes, or until it is golden brown.
With tongs, remove the bacon pieces from the pan and set them aside on kitchen paper towels to drain.
Pour out all but 1 tablespoon of bacon fat from the pan.
In a large mixing bowl, beat the eggs, cream, flour, salt and pepper together with a wire whisk.
Pour the egg mixture into the pan.
Reduce the heat to very low.
As the mixture begins to set, lift the set edges to allow the liquid egg mixture to run on to the pan.
Place the bacon on top and sprinkle over the chives.
Cook for about 20 minutes, or until the underside is golden brown.
Slide the cake on to a warmed serving dish.
