Scampi Apple And Cheese Salad Recipe
Ingredients
| Cottage cheese ricotta | 8 Ounce | |
| Chopped nuts | 1/2 Cup (16 tbs), toasted | |
| Escarole, curly endive or lettuce | ||
| 1 dessert apple, cored, sliced and brushed with lemon juice | ||
| Prawns | 16 , frozen | |
| Oil | 3 Tablespoon (Dressing) | |
| Lemon juice | 1 Tablespoon (Dressing) | |
| 1/2 avocado pear, mashed | ||
| Cream | 1 Tablespoon (Dressing) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1) Roll the cheese into round ball shapes about the size of walnuts.
2) Next, roll the cheese balls on a layer of chopped nuts.
3) Chill them.
4) Take a 4 glass serving dishes and in each, put some shredded escarole, lettuce or endive.
5) Arrange on the top, the slices of apples, large shrimps (prawns) or scampi and cheese balls.
6) Mix together all the ingredients for the dressing.
7) Pour the dressing individually over the salads.
SERVING
8) Serve with chips.
TIPS
If cottage cheese is used, sieve it before rolling into balls.
