Scampi Alla Romana Recipe
Ingredients
| Jumbo or super jumbo shrimp- 20--24 | ||
| Butter | 1/2 Cup (16 tbs) | |
| Garlic | 2 Clove (5gm) | |
| Shallots- 4, OR Green onion- 1/2 cup, thinly sliced | ||
| Lemon juice- 1 tablespon | ||
| Worcestershire sauce | 1 Tablespoon | |
| Cayenne pepper- a good pinch | ||
| Parsley | 1 Tablespoon, chopped | |
| Dry white wine | 1/4 Cup (16 tbs) | |
Directions
GETTING READY
1. Peel and devein shrimp, leaving tail attached
MAKING
2. Melt butter, add garlic and onion, stir in lemon juice, worcestershire sauce, cayenne pepper, parsley and wine
3. Place shrimp in a heat-proof platter or broiler pan and
pour 1/2 garlic butter mixture over shrimp
4. Broil 5" from heat for 3 minutes
5. Turn shrimp over, pour remaining garlic butter mixture over and broil 3 minutes longer
6. Allow shrimp to marinate 2 minutes before serving
SERVING
6. Serve with garlic bread or salads
