Scallops In Lime Juice Recipe

Ingredients
1 pound bay scallops (sea scallops may also be used; cut them into smaller pieces.)
1 paper thin slice fresh gingerroot, minced
1 teaspoon sugar
Juice of 1 lime
1/4 teaspoon salt
Directions
Toss all ingredients except the salt together in a shallow glass dish.
Cook on the highest setting for 2 minutes.
Stir once so that the scallops cook evenly.
Season with salt.
The scallops can be served immediately or chilled for 4 hours and served with small pieces of avocado, pimiento, or chopped tomato.
A few pitted green and black olives make an attractive garnish.
