Scallops Deluxe Recipe
Ingredients
| Scallops | 3/4 Pound | |
| Onion | 1 Small, finely chopped | |
| Salt | 1 Teaspoon | |
| Beef | 1 | |
| 2 cans cream of celery soup | ||
| Pimento | 1 , diced | |
| Lemon juice | 1 Teaspoon | |
| Eggs | 2 , beaten | |
| Cheese | 3 Tablespoon, grated | |
| Saltine crackers | 2 Cup (16 tbs), finley crushed | |
Directions
Quarter scallops; place in saucepan.
Add onion, salt, bouillon cube and 2 cups water.
Cook for 15 minutes or until scallops are just tender.
Mix soup, pimento, lemon juice, eggs and cheese together; add to scallop mixture.
Stir in half the cracker crumbs; pour into 9-inch casserole.
Sprinkle remaining crumbs over top.
Bake at 350 degrees for 30 minutes.
