Scallops Baked in Batter Recipe

Ingredients
Scallops – 1 quart
Fine Cracker Crumbs – ½ cup
Salt – 1 teaspoon
Paprika – 1/8 teaspoon
Salad Oil – ½ cup
Eggs – 2, slightly beaten
Flour - 1 cup
Salt – ½ teaspoon
Milk – 2 cups
Parsley – 1 tablespoon, finely chopped
Directions
GETTING READY
1) Using absorbent kitchen paper, wipe the scallops
MAKING
2) Roll the scallops in cracker crumbs seasoned with salt and paprika
3) In a skillet, pour in some oil and sauté the scallops till browned
4) Mix in the remaining ingredients, eggs, flour, milk, parsley and beat using a fork
5) Place the scallops in a baking dish and pour the batter over
6) Bake for 35 minutes at 425F till puffed and browned
