Directions
1) In a bowl, add garlic, zest and juice of 1 lemon, chipotle sauce, chopped chipotle pepper, olive oil and salt to taste.
2) Mix well and pour into the scallops and allow to marinate for about 15 minutes.
3) Halve the bacons, wrap the scallop into the bacon strip, then thread into the skewer. Repeat for all the scallops and bacon strips.
4) Grill them for 5-8 minutes until evenly crisp.
SERVING
5) Plate and serve as an appetizer.
