Scallops With Golden Cream Sauce Recipe

Ingredients
2 tablespoons butter or margarine
1 medium red pepper, cut into thin strips
1 cup uncooked regular rice
1 envelope Golden Onion Recipe Soup Mix
2 1/4 cups water
1 tablespoon lime juice
1/4 cup light cream or half and half
1 pound bay scallops
2 medium green onions, sliced
Directions
In medium skillet, melt butter and cook red pepper over medium heat until crisp-tender.
Stir in uncooked rice, then golden onion recipe soup mix thoroughly blended with water and lime juice.
Bring to a boil, then simmer covered 30 minutes or until rice is tender.
Stir in remaining ingredients and cook covered 5 minutes or until scallops are tender.
