Scallops with Coriander Orange Sauce Recipe
Ingredients
| Sea scallops | 1 1/2 Pound | |
| Green onions | 1/4 Cup (16 tbs), sliced | |
| Orange juice | 1/4 Cup (16 tbs) | |
| White wine | 2 Tablespoon | |
| 1 tablespoon plus 1 teaspoon cornstarch | ||
| Salt | 1/4 Teaspoon | |
| Ground coriander | 1/4 Teaspoon | |
| Orange peel | 1/4 Teaspoon, grated | |
| Water | 2 Tablespoon | |
| Butter/Margarine | 2 Tablespoon | |
Directions
In 1 1/2-quart casserole, combine scallops, onions, orange juice and wine.
Cover.
Microwave at 50% (Medium) for 10 to 13 minutes, or until scallops are firm and opaque, stirring twice.
Remove scallops with slotted spoon to medium bowl.
Cover.
Set aside.
Add water to cooking liquid to equal 1 cup.
Return to casserole.
Set aside.
In small bowl, combine cornstarch, salt, coriander, orange peel and 2 tablespoons water.
Mix well.
Blend into cooking liquid.
Add butter.
Microwave at High for 3 to 4 minutes, or until mixture is thickened and translucent, stirring once or twice.
Gently stir in scallops.
Cover.
