Directions

1. Place the scallops under a grill until they open. Detach the shells with a sharp knife and keep 6. Remove the beard-like fringe and black intestinal thread. Keep only the white flesh with the coral. Rinse well and cut into pieces.
2. Peel and chop the shallots. Wash the chives and chop them roughly.
3. Place the flesh of the scallops in a dish. Add the 2 kinds of oil, lemon juice, shallots, green pepper and chives. Mix well and marinate for 30 minutes in the refrigerator.
4. Fill the shells with the strained scallop mixture, and pour over each shell a little of the marinade. Serve the rest of the marinade separately in a sauceboat. Accompany with lemon quarters.
