Scallops With Cheese Sauce Recipe
Ingredients
8 sea scallops
1/2 cup grated Parmesan or any other sharp cooking cheese
1/2 cup milk or dry white wine
2 tablespoons butter
1/2 cup cream
2 tablespoons flour
2 egg yolks
A pinch of dry mustard
Pepper
1 clove garlic, crushed
1 tablespoon grated cheese for dusting
Directions
Poach the scallops in milk (or wine) for 5 minutes.
Remove them from liquid and cut into slices.
Reserve liquid.
Make a sauce by melting the butter and adding the flour and mustard.
Gradually add the reserved liquid and crushed garlic.
Cook the sauce for 5 minutes.
Remove it from the fire and add the cheese and cream.
Beat in the egg yolks.
Add the sliced scallops and the pepper.
Taste for salt.
Divide mixture among 4 buttered scallop shells.
Dust over with grated cheese and brown under the broiler.
