1 lb (450 g) scallops, fresh or frozen
 
1 Cup (250 ml) garlic vinaigrette
 
1 tbsp (15 ml) milk
 
2 eggs, beaten
 
1/2 Cup (125 ml) cooked ham, chopped
 
1/2 Cup (125 ml) breadcrumbs
 
2 tbsp (30 ml) grated Parmesan cheese
 
Salt
 
Oil
 
Commercial spicy sauce

Directions

–  In a deep-fryer, heat oil to 375 °F (190 °C).
–  Marinate scallops in the vinaigrette for 30 minutes.
–  Meanwhile combine milk and beaten eggs and set aside.
–  In a separate bowl, combine ham, breadcrumbs, and cheese, and season mixture with salt.
–  Drain scallops, dip into egg mixture, dredge with breadcrumb mixture, then cook in deep-fryer until slightly golden. Drain on paper towel and serve with spicy sauce.
