Scallops Provencal Recipe

1 pound fresh bay scallops
3 tablespoons lemon juice
1/2 pound fresh mushrooms, sliced
1/2 cup sliced green onions
2 cloves garlic, minced
3 tablespoons olive oil
2 medium tomatoes, peeled and coarsely chopped
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried whole oregano
1/4 teaspoon pepper
Directions
Toss scallops in lemon juice; set aside.
Saute mushrooms, green onions, garlic, and scallops in hot oil in a large skilletuntil scallops are almost done.
Stir in remaining ingredients, and saute until scallops are done.
