 Sea scallops24
 Olive oil2 Teaspoon
 White vinegar2 Tablespoon
 Low sodium soy sauce1⁄4 Cup (4 tbs)
 Ground ginger1 Teaspoon
 Garlic1 Clove (5 gm), finely minced
 Finely minced parsley1 Tablespoon (Use Fresh)
 Minced fresh parsley1 Tablespoon
 Nonfat cooking spray4

Directions

GETTING READY
1 Throughly clean the scallops and put them in a resealable plastic bag.
2 In a bowl, mix together the oil, vinegar, soy sauce, ginger, garlic and parsley together and pour over the scallops.
3 Seal the bag and place in the refrigerator for approx 2-6 hours.
4 Coat the grill with some cooking spray and preheat for 5 minutes.

MAKING
5 On the skewers, thread the scallops and place on the grill horizontally for 4-6 minutes, or until they become opaque.
6 Do not allow to overcook.

SERVING
7 Discard any extra marinade and serve immediately.
